Refreshing Watermelon Salad

OK friends this is so easy, other than using a sharp knife, your 3 year old can make this.

Also, I called it a salad but it’s kind of one of those dishes thats more like an appetizer…or is it a salad? Well, lets just go with salad I guess.

It almost feels silly even creating a recipe card for this 5 ingredient dish but over the last two years I had been craving this but couldn’t’ find a dairy free feta cheese that gave me that salty bite I liked, so for the last two summers I didn’t make it. And then I kind of forgot about it.

Once I found Violife vegan cheese I did a little happy dance because I love this sweet, salty summertime treat.

Sidenote: I know I talk about Violife DF cheese a lot but it really is the best I’ve tried. And no I am not a paid sponsor for this brand although…Yoohoo, Violife...over here! I’d be a paid sponsor in a heartbeat. That’s how much I like this cheese!

I honestly don’t understand the kind of magic they do to make this cheese and have been asked by friends what it’s made out of so here are the ingredients: Filtered Water, Coconut Oil, Potato Starch, Salt (Sea Salt), Glucono Delta Lactone, Flavor (vegan sources), Olive Extract, Vitamin B12.

Obviously if you are not dairy free than just use your favorite feta.

Anyways, nothing better than a recipe card to remind me and you of this simple deliciousness.
And I owe some of you, who could give a flying fork about Tom Hanks, a summer recipe so here ya go buddies!

Refreshing Watermelon Salad

Nothing is more refreshing during the summer months than a light, sweet and salty salad. This one covers all those bases. And with only 5 ingredients it couldn't be simpler.

Course Salad

Ingredients
  

  • 1 whole Seedless Watermelon
  • 1 block Feta Cheese I use Violife dairy free cheese
  • 1 handful Fresh mint leaves
  • Drizzle Extra virgin olive oil
  • 1/2 wedge Lime
  • tiny pinch salt

Instructions
 

  • Cube the seedless watermelon and place in a large bowl or platter
  • Squeeze the lime juice on watermelon
  • Crumble feta cheese and sprinkle over the top of watermelon
  • Julienne the mint and sprinkle on the watermelon
  • Drizzle the extra virgin olive oil over all ingredients
  • Sprinkle with a tiny pinch of salt
